The "6-2-1-1 Nutritional Program" is a 20+ year proven program developed and used at the COUNTRY DOCTOR NUTRITIONAL CENTER, in Cheyenne, WY. The 6-2-1-1 Nutritional Program is effective and designed to work for almost everyone.

VEGETABLES:

-
50% of all vegetables should be eaten raw
-
Mix vegetables of different color – MORE COLOR – MORE NUTRITIONAL
-
Mix vegetables types – 6 pieces of one vegetables does not count
-
2 veggie salads each day – PREFECT
-
Do not use canned vegetable: vegetables are heated to 117 degrees becomes ultra-processed foods and are dead vegetables now. They are super-heating during the processing, which destroys the natural enzymes. Natural enzymes in fruits helps break down the fruit for proper digestion.
-
Iceberg lettuce has zero nutritional content except for the outside leaves. Iceberg lettuce contains an ingredient similar to an opiate that could shut down your colon.
-
Non-starchy vegetables – purple cabbage, eggplant, arugula, asparagus, Brussels sprouts, celery, jicama, Swiss chard, kohlrabi, cabbage, red pepper, artichoke, bean sprouts, broccoli, cauliflower, celery, cucumber, onions, peeers/capsicum, salad greens, tomatoes, turnips, zucchini/courgette, and mushrooms.
FRUITS: Fresh – Pure – Whole – Natural

-
Fresh fruit unavailable? Switch to dried fruit. Pour pur1 inch purified water over dried fruit – let soak overnight. The dried fruit will absorb the water and become plump and soft. Heat over low heat for stewed fruit.
-
Do not eat fruit with any other food. Fruit digest in the small intestine, not the stomach. Always eat fruit 1 to 2 hours after breakfast, morning snack and 1 to 2 hours after lunch, as an afternoon snack. For the body to properly digest the fruit it needs to pass through a clean stomach to the small intestine. Any food in the stomach will stop this process, fruit will ferment in the stomach, producing toxins before it arrives in the small intestine, creating toxin environment for digestion.
-
For 100% fruit juices – same recommendation as fresh fruit– 1 to 2 hours after a meal.
-
Do not use canned fruits: fruit is heated to 117 degrees becomes ultra-processed foods and are dead fruits now. They are super-heating during processing, which destroys the natural enzymes. Natural enzymes in fruits helps break down the fruit for proper digestion.
STRARCH AND PROTEIN: Meat and potatoes are not part of the 6-2-1-1 program.

-
In order to feel better – Your eating habits need to change!
-
Do not mix starches and proteins together.
-
Starch – no problem – don’t not eat it with meat
-
Protein – no problem – don’t eat it with starch
-
When you eat meat the stomach produces Hydrochloric acid to break down the meat into liquid. Nutrients are then absorbed by the body from this liquid.
-
When you eat a starchy food all of a sudden the stomach has to switch gears to produce an enzymes, (enzymes are alkaline) to break down the starch – a completely different digestive juice.
-
Problem – Meat produces hydrochloric acid and enzymes are alkaline – Acid and alkaline neutralize each other and the proper digestion stops. The food will lay in stomach and fermentation creating toxins. How often do we say “GREAT MEAL” everything tasted great but now I have stomach ache or feel bloated.
-
Starchy vegetables – corn, white potatoes, sweet potatoes, taro, green peas, lima beans, winter squash, turnips, cassava, plantain.
Replace white sugar with evaporated cane juice, raw local honey, sorghum or black strap molasses.

Replace white flour with 100% whole wheat flour – approximately 30% of all processed foods contains white flour.

Replace margarine with butter – margarine contains trans fatty acids and the body will not and cannot metabolize trans fatty acids. It will only be stored in our arteries. Butter is little higher in cholesterol, but the body can metabolize butter and butter will not clog the arteries.

Avoid foods fried in oil – when the oil is heated to fry foods it changes from fatty nutritious acid to a trans fatty acid. The body does not metabolize trans fatty acids increase free radical that can lead to heart disease, internal inflammation and age-related problems.

Treat yourself 1 day a month to satisfy your cravings – pastries, pies, ice cream, or fried foods but – go back on the 6-2-1-1 Nutritional Program the next day. If you do not satisfy your craving you will give up on the program. Remember you are not only changing the way you eat but your lifestyle.
